Cool Pancakes


HELLO! How are you my ladies and gents?

 Today I prepared for you [actually.. for me and my bf] a fluffy-cool-yummy-delicious dessert
One of the reasons that I love blogging is that makes me attempt new recipes. And for me, pancakes and other -like jam- are new!

I have organized my summer vacations in August, because me and Harry have to finish our final project for Uni. As I told you is a bit hard to live in a greek city in the heart of summer, but the sales season make it more easy for me! So, almost every day, I'm taking a walk through the stores to find the best opportunities for me. 

Let's go back to pancakes now! You need just 15 minutes from your day time to try this and believe me    it's worth your time. 
  All you need is:

Ingredients:
  • 3/4 cup milk
  • 2 tablespoons white vinegar
  • 1 cup all-purpose flour
  • 2 tablespoons white sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 2 tablespoons butter, melted
  • cooking spray

Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour".

Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into "soured" milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.

Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

I choose for the top a frozen greek yogurt with honey and nuts, cherries and dark chocolate. The extra honey on the top of the top mean the end of photo shooting because Harry couldn't wait anymore to taste it!

  1. Superb!! Loved the greek yoghurt addition. I bet it gives that extra tinge of sour that is balanced with the honey and the spongy yummy texture of the pancake!! Excellent photos and recipe!! :)
