Banana & Cinnamon Muffins

hello hello!
i'm here again posting a recipe i tried [twice] last month. i have to say, i had no experience with muffins or related cakes before but i was always a big fan of them, compared to cupcakes. this is because i feel regretless. they are healthier, aren't they? so, i made this easy recipe to celebrate the end of my winter cravings! 
you know, spring is getting closer and i feel different! i need to workout my body| to eat more season vegetables| to visit countryside| to practice with my film camera| blah blah blah...

[FILM PHOTOGRAPHY COURSES | my friends graduation present] oh i can't wait to show you some of my film photos. i guess i have to scan them first, NOOB! anyway, i'm so excited!!! 

also, today is my blog's one year anniversary!!! so, happy one year my little FiC :)

i couldn't post any of the preparation photo because of the bad lighting, again [evening craving :p].
also, excuse me for not taking any photo to show you the inside of the muffin. i forgot it!?

Ingedients [makes 14-18]:

3 large or 4 small well-ripe bananas
190gr all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon 
150gr cup brown sugar
2 eggs
125gr melted butter


Preheat the oven to 180°C.
Mix the mashed banana, eggs and melted butter together. Set aside. In a separate bowl, mix together baking soda, baking powder, sugar, salt, cinnamon and flour. 
Mix wet and dry ingredients all together! 
Pour into greased muffin tins, and bake in 180°C  oven for approximately 20 minutes.

she is definitely a gorgeous girl! in this video she is like a little lady in a dreamy world... but she can manage it perfectly well even in real life. actually, i adore her casual clothing!

Onion tart

one of my top last minute recipes                 .

hello my dears! 
i'm glad to present you a recipe i created on my own after a request by a good friend, who asked me to inspire her. i know that she is a big fan of all the ingredients i used for this tart. i actually remember us together, as freshmen students and newbies in cooking, trying dishes always with onion, cause we adore it and we couldn't imagine tasty food without onions! Also, we are both lovers of pies and of crunchy rustic dough. 

So, i have to admit that i managed to make, nothing more than a recipe with the sweet taste of onion [helped by leek] upon a dough of my preference    [which I have already presented it here].

For the dough: here .  attention: you will need the half of the ingredients


Filling Ingredients:
3-4 medium onions, thinly sliced
1 clove of garlic
1 leek, thinly sliced
2-3 cherry tomatoes
1/2 cup dry white wine
1 tsp butter
[i put a handfull of white mushrooms]
olive oil, pepper, salt [spices of your choice]


Make the dough and preheat to 220°C.

Heat the butter in a pan over medium-high heat and add the clove of garlic till brown, then remove it.
Add the onions and saute until soft [for about 3 minutes], then add the leek pieces [and mushrooms] and keep cooking for about 10 minutes.
While they are almost ready [soft enough], add salt, pepper, spices and the cup of wine and cook till wine evaporates.

Roll out the dough to fit in the bottom and up the side of a round pan [or tart tin] and evenly add the filling. Add cherry tomatoes on top and few drops of olive oil. Fold the dough and bake for about 30 minutes of until the crust begins to golden brown.

Brownies

i said brownies          .



hello my friends!

hello me and welcome me back | hello me and let me apologize for my absence | let me tell you how much i missed you guys | let me tell you the reasons of my absence | but now i'm back, back, back| too emotional.
i'll just say 3 things: crushed laptop, lost all data, bad mood.


how about you my dears? i want you to know that i was watching you through your posts but i sometimes couldn't leave a hi! that's because my 4th reason of absence.. i'm in a preparation season for my master degree in sept 2013, so this keep me hours away from blogin' things! ahm...what else (?) i think that's all for now!
i have to say that i was searching a lot for the super recipe, just to surprise you, but once more i ended with something simple! i know you are going to agree with me, cause this stuff is simple but rich. is this acceptable to you all? as a chocolate fan i appriciate recipes like this one and i always prefer them. hope you too! keep in mind that this is a clear brownies recipe, excellent on their own but still a perfect canvas for adding in what you please.

as you can see, i decorated them in two ways. just because i couldn't take a decision!
first one  -the snowy- with powdered sugar and sour cherries from my mums homemade liquer and the second with cocoa powder and dark chocolate. enjoy it!

Ingedients [makes 12]:

5 tablespoons unsalted butter
225 gr bittersweet or semisweet chocolate, chopped
3/4 cup natural cane sugar
1 teaspoon vanilla extract
2 large eggs, room temperature
1/4 cup oat flour or unbleached all purpose flour [ i process quick oats in a food processor]
pinch of salt



Preheat the oven to 180°C. Line the inside of a normal pan with parchment or foil allowing the excess edges to extend beyond the edges of the pan. Lightly grease with butter.
In a medium saucepan, melt the butter, then add the chocolate and stir over low heat until the chocolate is melted and smooth. Remove from the heat and stir in the sugar and vanilla until combined. Beat in the eggs one at a time. Add the flour, pinch of salt and stir energetically for 1 full minute, until the batter looses its graininess, becomes smooth, and begins to pul away from the sides. 
Bake until the center is almost set, about 25-30 minutes. Don't overbake. Let them cool completely before lifting out the parchment to remove brownies.
