Chicken Fajitas


 Quick n Easy
I bought a pack which contains the most ingredients (flour tortillas, sauce, salsa chili powder)
, so the extras are the colourful peppers, 1 onion and 2 skinless, boneless chicken breastes..

Slice the chicken lengthways into long strips, roughly the same size as the capsicum strips..
 As the pan is really hot, keep turning the pieces of chicken and vegetables over so they don'’t burn – I just want them to lightly chargrill to give you a lovely flavour..

Spinach Pie

[Spanakopita]

...I made my own phyllo dough for the first time
Mix spinach, green onions, fresh parsley and dill (chopped), olive oil, 
salt and freshly ground black pepper to taste..
[the greek traditional recipe uses feta and 2 eggs into the mixture]
I freeze the leftover dough for another use..
Bake in a preheated 180 °C (350 degree Fahrenheit) oven until the pita turns a deep golden brown.
Let cool 10 minutes before serving.

Shrimp with Spaghetti



 Fresh shrimps

Sautéed shrimp (just for 1-2 minutes)
..and put them back in pot to simmer when tomato sauce is almost ready.

 Stir sauce into cooked pasta
  Ouzo- Smell like summer!!!

I have to say that this dish cooked by my sweet boyfriend!
