Summer Day Trip


Fall has totally come  ..but my mind is back in summer where life there is so unstressed. I just want to share with you a couple of photos from a day road trip in beautiful Peloponnese. We had a really good time inside the graphic villages and nature! Ohm.. how much I miss countryside !?

Artichokes & Prosciutto Pizza



 Hey hey you my lovely readers! How you doin'?
It's been a looong time since I left you for my summer vacations and I have to apologize for my absence,
..but it was impossible to post because there was no internet connection in the area. 
..and then I came back and there was no time to post because of my exams [I hope the last Uni-exams].
..and now I'm a bit anxious, I'm waiting to hear the good results and then to graduate !


Well, that's all for me, now back to the recipe..

I made a pizza, as you can see!
There is a variation at the dough. I made a pie dough, not a pizza dough and I try it with 20% wholemeal wheat flour.

Ingredients [dough]:
300gr all-purpose flour [I use 20% wholemeal wheat flour -60gr-]
1 teaspoon vinegar
3/4 cup water
1/8 cup olive oil [0.125gr]
salt

Work the dough with your hands for a long time and slightly chilled for half an hour.

Evenly distribute parmesan,
mozzarella, artichoke, rosemary and few drops olive oil.

I preheat to 220
°C [430 degree Fahrenheit]. Bake for 20 minutes or until the crust begins to turn golden brown.

Ι placed
slices of prosciutto to the top [I prefer it raw].

Summer River Festival


I'm at my hometown for a couple of days. I'm always happy to be here and pass time with my parents and my childhood best friends. Every summer a little-5days-riverfest takes place, where we [i mean me and my friends] have the opportunity to celebrate with live music, theater, lots of beers, DJ's, junk food etc. It was awesome for us to hang out with lovely people and have fun near the beauty of the river [called Ardas]!

Cool Pancakes


HELLO! How are you my ladies and gents?

 Today I prepared for you [actually.. for me and my bf] a fluffy-cool-yummy-delicious dessert
One of the reasons that I love blogging is that makes me attempt new recipes. And for me, pancakes and other -like jam- are new!

I have organized my summer vacations in August, because me and Harry have to finish our final project for Uni. As I told you is a bit hard to live in a greek city in the heart of summer, but the sales season make it more easy for me! So, almost every day, I'm taking a walk through the stores to find the best opportunities for me. 

Let's go back to pancakes now! You need just 15 minutes from your day time to try this and believe me    it's worth your time. 
  All you need is:

Ingredients:
  • 3/4 cup milk
  • 2 tablespoons white vinegar
  • 1 cup all-purpose flour
  • 2 tablespoons white sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 2 tablespoons butter, melted
  • cooking spray

Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour".

Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into "soured" milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.

Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

I choose for the top a frozen greek yogurt with honey and nuts, cherries and dark chocolate. The extra honey on the top of the top mean the end of photo shooting because Harry couldn't wait anymore to taste it!
