Homemade Energy Bars


 Hello my friends! How you doin'?
 One more little post for today. A very quick recipe I made with my apricot jam!
Bars is a full of energy meal and  a terrific option for athletes or for students as well. So they given me energy for my daily study and they are a healthy snack for my boys [my brother and Harry].
Oh I said study -I have good news for me!- Just one more lesson separates me from the end of the exam period and summer!!!

Ingredients:
1-1/2 cup Flour
1-1/2 cup Oats
1 cup Packed Brown Sugar
1 teaspoon Baking Powder
1/2 teaspoon Salt
1-3/4 stick Salted Butte [cut into pieces]
1 jar Apricot Jam

Preheat your oven to 180 °C (350 degree Fahrenheit).

In a large bowl combine all the ingredients except the jam.
Press half of the oat mixture into the bottom of the pan, and spread the apricot preserves on top. Then sprinkle the rest of the oat mixture over the preserves and pat lightly.

Bake for 30–40 minutes or until the bars are lightly browned.
Allow them to cool completely before cutting!

Apricot Jam

 This is a childhood memory at grandma's house..
Well, I have never imagined that one day I could make my grandmother's recipes and I would find them easy to make!
These memories come back when Harry brought me home more apricots than we can manage.
So, let's start with the recipe!
For 1kg apricots I used 600gr sugar and juice of 1/2 lemon [if you prefer more sweet taste, you can use 'till 800gr of sugar].
After washed and cut them in half, bring in a pot with the sugar and leave them sleep all night in the fridge.
Next day, bring to boil over medium-high heat, stirring occasionally.
Once mixture reaches a rolling boil, add the lemon juice and continue to boil it for some minutes, stirring frequently to prevent it from sticking.

[The jam should turn a darker colour and should jell when cool]
Remove from heat, fill jars and turn upside-down. Then let them cool completely.
To be honest I always put a double layer of butter on my bread but it's been two weeks that I avoid these kind of habits
 [you know-because of summer-body-crisis] !

make my day

Nafplio 2011
I'm waiting until these days come back again..

 ..by making frozen homemade lemonade

 ..and eating all the seasonal fruits- just to understand that summer has already come!!!


I love to watch the growing of my little plants
..and the taste of mozzarella-tomato-basil in my mouth

Finally, I adore to end my day by taking a brief study break!!!

"Oh Yes!"- As you might understand, I can't wait 'til my summer holidays!!!
As you might understand too, is very hard for me to study for my exams when it's so sunny outside... and that's all for me!

Potato Salad

 Potato salad is one more quick n easy recipe and a great dish for summer season. 
I always make a big quantity and keep it in fridge for couple of days.
--------------

The only preparation is to boil the potatoes [with  the peel].
..chopped and combine fresh onions, red pepper, pickles and a half bunch of dill. 
Those ingredients are just my preferences, there's nothing wrong with the recipe to use whatever you have on hand.

 Sprinkle olive oil, lemon juice, salt and pepper on top.
Give it a good stirring and ready!
